Leek cake with prawns: an easy, finger-licking recipe that solves a dinner with friends and you can prepare the day before

I love receiving guests at home, I really do. I enjoy it very much! Of course, I don’t like last-minute rushes, stress and unforeseen events. Therefore, on these occasions I always trust dishes that can prepare in advancelike the avocado salad with green mojo, and that at most need a touch of heat or decoration before serving them.

Among my favorite options are savory pies, because they are great for many diners. You have them hot like the eggplant pie or cold, like the cold prawn pie with tuna and avocado mayonnaise, the one with avocado and salmon, or this one that I bring you today that has one of my favorite ingredients: leek, with that spicy touch more subtle than onion.

I can tell you that you are going to love this cold cake. Although in the recipe we talk about prawns, you could also use shrimp if it suited you better. Likewise, although in principle the recipe calls for whole milk, you can use evaporated if you already have it at home or want to make it something lighter.

It’s as easy as cutting the ingredients into pieces of the same size to make it more pleasant to taste them. Then you will have to fry the leeks and add the prawns at the end (don’t overdo it!). Finally, you will have to blend the sauce with the rest of the ingredients, pour it into the mold and bake in a water bath for 1 hour.

Don’t you have homemade tomato sauce? Use packaged crushed tomatoes, reading the label carefully to avoid those that have too much sugar.

If you don’t have prawns, you can substitute them with prawns.

  1. Cut the ends of the leeks, make a cut from top to bottom and remove the outer layer; Open them well under the tap, wash them and cut them into small pieces. Peel the prawns, remove the heads and intestines, and also cut them into small pieces.
  2. Sauté the leeks in a pan with a little hot oil, about 14 minutes, stirring often. Then add the prawns and sauté them for about 3 minutes, which takes them to change color. Salt and pepper.
  3. Preheat the oven to 180°C. In the blender glass, place the eggs, milk and tomato sauce and beat. Then add the prawn and leek mixture and beat again. Season with salt and pepper to your liking.
  4. Lightly grease a rectangular mold and pour the mixture into it. Place the mold on a tray or baking dish with hot water to do it in a bain-marie; It will take you about 1 hour.
  5. If you see that it is toasting too much, do as with the biscuits: cover it with aluminum foil. Remove from the oven being careful not to burn yourself and let cool on a rack.
  6. Unmold when it is cold and refrigerate, covered, in the refrigerator so that the outside does not dry out. Take it out when you are going to serve it and decorate it to your liking.
