Why honey cakes?

In diverse European and North African cultures, the ancients considered the rare prize of honey collected a gift from the gods.

In the neopaganas traditions born in Western Europe, many practitioners continue to leave honey cakes in the garden the night of San Juan to delight the forest spirits, sometimes called «fairy».

Serve honey cakes during a ritual summer solstice or leave them on the altar/in the garden as an offering.

With this idea in mind, I bought high quality honey on my trip to Savannah, Georgia earlier this year. I’ve been keeping it all this time!

For adults and lactose intolerant, hydromiel (honey wine) also combines very well with honey cakes.

Add a bonfire and some Tiki torches, and make this lovely festive food in an unforgettable moment.

You may have a little dough. Replacing sugar with honey is a delicate issue, so I concentrated on getting the correct proportions and apparently I went from the amount of mass in about 4 muffins.

Reduce proportions at your own risk. Or simply do what a reader did and prepare some extra cupcakes (perfect for the altar or as an offering).

You will need:

-1 bee nest cake mold

-To cookie

-3 Common flour cups

-3/4 tablespoons of dusty yeast

-1/2 teaspoon sodium bicarbonate

-3/4 sugar cups

-1 teaspoon of salt

-1/4 honey cup

-2 butter bars (softened)

-4 eggs

-1 cup of milk

-1 tablespoon vanilla extract

-Secoite or kitchen spray to grease the mold

First step

Preheat the oven at 325 degrees. Báj it if your oven is hot. Gate your silicone bee nest cake mold.

Step 2

Mix the flour, baking soda, dusty yeast and salt in a bowl. Reserve.

Step 3

Beat the butter and sugar until it is spongy. Incorporate the eggs one by one. Add honey. Incorporate the vanilla.

Step 4

Gradually add the flour mixture, alternating with milk. Beat until you get a homogeneous mixture.

Step 5

Place the mold on a baking tray. Pour the dough into the greased mold and put it in the preheated oven.

Step 6

Careful! Honey caramelizes a batch faster than sugar. Bake until you can nail a fork on the cake and leave clean.

Step 7

Let cool for at least 1.5 hours before unmolding. Unmold carefully by placing another cookie tray on the «side of the cake» of the mold and turning both cookies. Demold carefully and see how it has done it !!!

  1. I reduced the recipe in half because it only had a small buns and cooked in an electric oven at 325 degrees for 20 minutes. They left perfect! Then I finished brushing the upper part with a honey and water syrup

  2. I did it with Cup4cup gluten flour and it went perfect. He got up in cooking a lot so he definitely not filling the mold all the way. I was over 1/4 «but I would recommend more than 1/2 to 3/4». But it also gave me enough to make 9 flower cakes in a MINI Bundt Cake Mold of Flowers. It took a long time to bake at 325 but it wasn’t done too much. I covered it with a bit of extra honey and fresh mounted cream and was the perfect cake for our summer solstice food.

  3. Hello!!! I did this a few days ago to bring the new moon and also as an offering. And of course, I gave some to friends and family. I made them in a mold of muffins and left great. I did not add so much sugar with mine and still knew quite well. Thank you for sharing this recipe !!!

  4. After half an hour of cooking I worried that the cake was burned since the center was not curdled, so like the tray in which I baked it has deep sides I threw some water. A beautiful gold brown color came after cooking at a slightly lower temperature for another half hour

  8. I did it with banana puree (and a little sugar -free apple sauce because I was left without banana) instead of butter because I am lactose intolerant and let me tell them … Do it! My mother. Mine is not seen as good as in the photo, but it is impressive. I’m going to pack these in my lunches for work.

  9. So I did a test for the solstice. I cut the ingredients in half to make a smaller lot. As it did not have a honeycomb mold or any other mold related to honey or bees, I decided to use silicone molds for tartlets and cakes (from Wilton). I made 7 of the tartlets. I used my little Airfryer Oven style and baked in the medium grid for 16 min to about 325f. I invested one of the Airfryer trays above the medium grid to divert the air flow and promote an equal gold. Using the Airfryer I make sure not to heat my kitchen in summer.

    I have to say that they are very good and the crumb is very tender. They are divine with a little honey on top. Perfect for summer. Now that I think about it a bit of lightly sweetened honey whipped cream on the side …. hmmm thank you very much.

    And thanks to all the other suggestions especially with the gluten -free.

  11. Has anyone done with duck egg instead of chicken egg? My girl is allergic to chicken eggs and I want to do this for her bee theme birthday

  12. Have you put a torch? Mine was not brown, so I added honey and put it under the grill, but next time I will use a hand torch.
