Ham and zucchini pastries without flour: the protein-rich and satisfying dinner that is finger-licking good

Two of the recipes that I have prepared the most in recent months have been spinach muffins and broccoli and goat cheese muffins, two great ideas that I immediately incorporated into my healthy dinner recipe book because they are easy and nutritious. And salty muffins take you out of more than one troubleeven for breakfast, a snack or to take to work as a snack. Let’s not forget that they are delicious and very versatile: once you get the idea, you will only have to change the fillings (try them with grated carrot because they are 10).

Today I bring you another proposal for salty snacks to make in muffin or cupcake moldshence its name. This time you will need one of my favorite vegetables: zucchini. If you have several at home, also take the opportunity to prepare such appetizing recipes such as the healthy flourless zucchini sandwich or the protein-rich zucchini cake that you can prepare in advance. A lot of ideas to take advantage of its properties and eat a variety of foods without ever getting bored.

As you will see thanks to the video by Yolanda Sepúlveda (@yol98_), these cupcakes are so easy that you can make them anyone who proposeseven without being a great expert in the kitchen. The idea is to make a sauce with the zucchini and leek, which gives the dishes a much more subtle flavor than onion.

Then you will have to mix it with the grated cheese, eggs and chives. It probably reminds you of the filling for vegetable quiches because it is exactly the same. Here you can also add ham or bacon to give it more flavor and more protein.

And all you have to do is preheat the oven, pour the mixture into the mold and bake for about 10 minutes. If you prefer, you can also make them in individual flannels.

The list of ingredients is designed for 6 people. If you are more or less, you will only have to adjust the quantities. As for the cooking methodyou can make them in the oven at 180ºC or in the air fryer at 170ºC.

Here you have the step by step of this recipe perfect for dinner which will take you very little time.

  1. Cut the ends of the leek, make an incision, wash it well, dry it and cut it finely. Wash, peel and cut the zucchini in the same way.
  2. Heat a lightly greased frying pan and sauté the leek and zucchini for a few minutes, until you see that they are tender. Salt and pepper them.
  3. Transfer the sauce to a bowl and mix it with grated cheese, eggs and chives. Mix well until all the ingredients are integrated. Preheat the oven to 180ºC.
  4. Place the ham slices in a greased mold. Fill with the previous preparation and bake for 10 minutes.
