Eggplant slices with honey

This cooking enthusiast suggests cutting the eggplant into slices and roasting it, giving it a very special touch. How to get it? On the one hand, adding pine nuts that will give textureand on the other brushing them with honey and balsamic vinegar, a winning combination.
Ingredients
- 1 eggplant
- 1 handful of pine nuts
- 2 teaspoons of honey
- Ground black pepper
- 1 pinch of salt
- 1 splash of extra virgin olive oil
- 1 teaspoon balsamic vinegar of Modena
Preparation method
As you will see, the recipe is very easy and makes in a jiffy. You can use the honey that you like the most, from milflowers to orange blossom, lavender, heather or eucalyptus, according to your taste.

- Preheat the oven to 210ºC. Wash and dry the eggplant. Cut some thin slices of the same thickness so that they are cooked evenly.
- Line a baking tray with parchment paper and place the eggplant slices on top without them touching each other.
- In a bowl, add two tablespoons of honey, 1 teaspoon of balsamic vinegar of Modena and a good splash of extra virgin olive oil, a pinch of salt and freshly ground black pepper. Mix well.
- Spread a silicone brush in the previous sauce and paint the surface of the eggplant slices with it. When they are ready, add some pine nuts on each one of them.
- Bake them until golden brown and ready to serve! That easy.
