I am very happy because this summer I am adding new recipes to my notebook. That’s how nice it is! Until today, I have discovered chef José Andrés’ avocado salad with green mojo, and I will surely like it. It’s going to be a lot of fun both on normal days and when I have guests at home.
As the Asturian chef says in his newsletter Longer Tablesin summer «meals are prepared, rather than cooked, with the best, ripest ingredients of the season, with bright, fresh flavors, and nothing too heavy!» So this original salad with the famous green sauce from the Canary Islands It is a great option that meets all those requirements.
Avocado salad with green mojo
The Asturian chef recommends a recipe for “light, healthy and easy dinner, without needing to heat the kitchen.” Hence, gazpachos and cold creams are a 10 idea to accompany this salad inspired by flavors of the Canary Islandswhich is also one of the dishes he serves at his restaurant Spanish Dinner.

The green mojo combines perfectly with wrinkled potatoes, meat, fresh vegetables and on this occasion with the creamy avocado. And to make it even more delicious, the chef add goat cheese and a little lime juice, which adds a touch of acidity.
Ingredients
- 1 avocado
- 100 grams of cilantro
- 2 cloves of garlic
- Roasted cumin seeds
- Crumbled goat cheese
- Chopped fresh cilantro
- Lime juice
- 200 ml extra virgin olive oil
- Sherry vinegar
- Pepper
- Salt
Preparation method
This salad is a delicious starter as is, but you might be interested add more protein. How could you do it without the dish losing its essence? Adding prawns, shrimp or similar, whatever you like or suits you best depending on what you have in the fridge.

- The first thing you will have to do is prepare the sauce. Mix the extra virgin olive oil, a splash of sherry vinegar, the garlic cloves, the coriander, the cumin seeds and a pinch of salt. You can do it in a mixer or in a mortar, whichever you prefer.
- Peel and cut the avocado into small pieces. Put it in a bowl, season it with salt and pepper and mix it with the mojo until it is completely coated.
- Finally, arrange it on a platter with the goat cheese, cilantro and lime. And enjoy this incredible flavor!
