Like other seeds, legumes They store inside all the nutrients that the plant needs to grow, but when they are germinated, these nutrients become more assimilable: starch is broken down into sugars, proteins are predigested and vitamins multiply.
A 60 g serving of sprouted lentils provides the 10% protein that are needed up to date, the 30% folic acid and the 17% vitamin C. The presence of this vitamin also allows you to take better advantage of its iron richness.
How to sprout lentils
- Activation soak. Put a certain amount of raw lentils in a glass jar and let them soak in water for 8 to 12 hours. After this time, the soaking water is discarded, the jar is covered with a mosquito net and this cloth is fixed to the jar with a rubber band so that it does not fall when, in the following steps of the process, we turn the jar upside down.
- Daily rinses. Rinse the lentils 2 or 3 times, without removing them from the jar, place the jar upside down (with the cloth) on a drainer and without direct light and let the lentils germinate inside the jar. Every day, for 3 or 4 days, they are rinsed again 1 or 2 times, until the sprouts are ready.
