Celebrate the abundant Sabbat of Lammas with this delicious recipe of handmade bread made to share or offer.
With the diminishing light of the summer, the gold waves bathe the wheat fields.
With the return of the wheel of the year, the time of the harvest arrives and bakes the last weeks of the station in a fresh bread and heated by the sun.

How to include herbal bread in Lammas.
Lammas is distinguished in the wheel of the year as a cereal harvest party.
The inclusion of hand baked herbal bread from scratch is a lovely complement to your solitary ritual or lame circle.
There are many ways to use this bread in your Christmas ritual.
You can leave them out as an offering for abundance in autumn.
It can also serve them as part of their «cakes and beer» ritual.
I love choosing herbs for Christmas bread. Almost any common garden herb will contribute something special to this bread, so choose something that adapts to your purpose (sage for wisdom, basil for love, ECT).
You can even turn the creative process of kneading bread into a ritual in itself. To know more about how to do it, consult the Christmas bread.
Tips
If you are going to decorate the top of the bread with herbs, as I did, the time is key. You have to bake them to just before they end before «laminar» herbs on top.
Of all the herbs I tried, the sage was the easiest to work. The coriander was the most difficult. The more rigid the sheet is, the easier it will be to maintain its shape when transferring it to the PAN.
Get the best quality olive oil you can find. Makes a enormous difference.
Ah, and keep a little to wet! This bread is incredible with a little olive oil to wet it.
Ingredients
1 cup of warm water
1 on active dry yeast
2,5 – 3 cups of common flour
2 tablespoons High quality olive oil
2 teaspoons of sugar
1/2 tablespoon powder garlic
1 teaspoon of salt
1 teaspoon of ground black pepper
Wind dry herbs (I used oreganoalbahaca and rosemary. It can also use Italian seasoning).
Optional:
fresh herbs to decorate
1 tablespoon egg whites
First step
Mix the warm water with yeast and sugar. Remove well. Let the yeast «activate» leaving it bubble, about 10 minutes.
Step 2
In a separate bowl, mix the flour, salt, dry herbs, black pepper and garlic powder.
Step 3
Add olive oil to wet ingredients. Slowly add the dry ingredients to wet until the mixture stops being sticky. Knead the dough until it stretches.
Step 4
Cover the bread with a clean towel. Leave it in a sunny window and let it go up until its size doubles (approximately 1 hour).
Step 5
Preheat the oven to 450 degrees. Form the dough in 5 separate balls of approximately 4 ″ in diameter.
Step 6
Bake 10-15 minutes.
Step 7
While the bread is baked, put a small pot with boiling water. Fill another container with ice water. Dip the fresh herbs in boiling water for 5-10 seconds. Then, submersed in ice water. Place them flat on paper paper and put more cooking paper on top. Press with a thick pan.
Step 8
About 3 minutes before the bread is fully cooked (just begins to brown, but it still seems raw) take it out of the oven. Spread the top with egg white. Be careful, place the bleached herbs on the egg whites of the bread and then be clearer of egg to «seal them».
Step 9
Put the bread again and let them finish browning.
You finished! Good! They look incredible!

This last Laghnasadh was the first time I celebrated it and used this recipe, it was also the first time I made bread or used yeast! It was super rich although I went a little with the spices because there really was not a specific amount in the list

How many herbs have you used? I would try to guess it, but I don’t want it to be too strong. Thank you.

Sincerely really depends. Herbal power can vary greatly. Sometimes, a spoonful of ground basil is not enough, sometimes it is too much. You have to experience.
