Ingredients

  • 1 large onion
  • 4 large red tomatoes
  • many sprigs of parsley
  • fresh mint leaves
  • Lemon juice (equivalent to 8 lemons)
  • 3/4 cup of broken wheat (you can get it in stores that sell nutritional and/or natural products)
  • Olive oil
  • Water
  • Salt to taste
  • pepper to taste

Preparation

Step 1. Chop

The first thing you should do is finely chop the parsley so that when you eat it in bites, it is easily digestible. Take mint leaves (the ones you want but make a good number) and also chop them very finely. Finally, chop the tomato and onion into fine pieces; this will make your salad have, in addition to a very rich appearance, a better flavor.

Step 2. Soak and mix

Put the wheat in a cup and let it soak in water for about 15 or 20 minutes. At the same time, add all the ingredients to a bowl large enough to allow you to mix easily: onion, tomato, parsley and mint; add salt and pepper to taste. Now, try to squeeze the wheat with your hand (by handfuls) to remove excess water and not over-wet the salad. Once you have done it, add it to the bowl with the other ingredients. Finally, add to the mixture the juice obtained from the lemons and olive oil to taste.

Step 3. Mix and serve
