Ingredients

  • rice noodles
  • A protein of your choice (chicken, shrimp or tofu)
  • a chive
  • 1 large carrot
  • two cloves of garlic
  • 1 package of peanuts
  • Chinese roots
  • two eggs
  • Vegetable oil
  • Fish sauce
  • Soy sauce
  • Turmeric
  • Lemon
  • Cilantro
  • Salt

Preparation

Step 1. Cut

Finely chop the peeled garlic, the sliced ​​onions and the peanut as small as possible. Also, cut the carrot into sticks. If you are going to use chicken as protein, cut it into not so big cubes and reserve it.

Step 2. Cook

Put water in a pot to boil and pour the rice noodles there for 2 minutes and allow them to rest in a container with water and ice to stop cooking. Now, put a splash of vegetable oil in a wok or large frying pan and once it reaches a certain temperature, add part of the chives, the chopped chicken and season with salt and turmeric. Add the carrot and sauté everything for a couple of minutes. Finally, add to this mixture the noodles, fish sauce (to your taste), soy sauce (to taste) and mix very well so that the flavors are integrated.

Step 3. Serve

Break the eggs and beat them in a bowl as if you were going to make an omelette. Leave a part of the wok where the ingredients are free and allow the tortilla to be made there.
