  • Half a kilo of meat to shred (skirt, brisket or overbelly)
  • 1/2 kilo of corn flour
  • One big onion, diced
  • Two diced tomatoes
  • Oil
  • 1 head of garlic finely chopped
  • 6 medium potatoes
  • Cumin
  • Thyme
  • garlic powder
  • Salt
  • Water

Preparation

Step 1. Cook

The first thing you should do is get a good dough. Here we teach you how to make empanada dough easily. Cook the meat in the pressure cooker along with water and allow it to beep for about 45 minutes, when you feel it soft, let it cool a bit and crumble it. Meanwhile, peel and dice the potatoes; take them to cook in salted water for about 12 minutes over high heat. When the potatoes are done, drain the water. Heat a frying pan, add a little oil and fry the onion and garlic. Add the tomato and stir a little so that it releases its water. Add seasonings like thyme, salt, cumin and garlic powder. Finally add the meat and potatoes. Mix very well.

Step 2. Boil

Once you see that the stew is thick and the tomato has released its juices, it means that it is ready. Heat enough oil in a pan. At this point you should already have the empanada dough made so it will be time to start filling. Put pieces of the dough on a plastic moistened with a little oil, add the amount of filling you want, fold the bag and cut with the mouth of a medium plate. Take out the empanada and take it to fry at once. Remember that you must let them take their characteristic golden color, take them out and drain them on kitchen paper.
