  • 1 pound of potato sabanera
  • 1/4 chicken or vegetable broth
  • 2 butter spoons
  • 1/4 cup of milk
  • 1 tablespoon of cream cheese
  • 1 cup of Parmesan cheese
  • Salt and pepper to taste


Step 1: Wash and peel

Wash the potatoes very well and proceed to peel them.

Step 2: Cut

Cut the potatoes, making sure that they are all the same size; then add them to a pot.

Step 3: Add the broth or water

Add the water to the pot or, if you prefer, use chicken or vegetable broth.

Step 4: Boil

Boil the potatoes with the water or broth over medium heat, until the potatoes are soft.

Step 5: Strain or Drain

Separate the potatoes from the water or broth with a colander or strainer and place them in a medium bowl.

Step 6: Shred

Mash the potatoes very well, avoiding leaving lumps.

Step 7: Add the Butter

Take advantage of the fact that the potatoes are hot and add the butter, so that it melts quickly and stir very well.

Step 8: Add salt, pepper and milk

Preferably when the purée is at room temperature add the salt, pepper to taste and the milk; continue stirring to combine all ingredients.

Step 9: Add the Cheeses

Step 10: Serve and accompany
