Ingredients

  • 1 liter of whole milk
  • 4 or 5 tablespoons of kumis
  • Two tablespoons of powdered milk
  • Sugar or sweetener of your choice

Preparation

Step 1. Pour

The first thing you should do is pour all the whole milk into a pot and heat it over medium heat until it reaches a temperature of 70 degrees. You can do this measurement using a kitchen thermometer. Once it has reached the indicated temperature, take out a little of this milk (between a quarter and a half cup), leave the pot over very low heat and mix it with the powdered milk, stirring with a spoon or kitchen balloon until there is no no lump. At that time, return it to the milk that you have on the fire, raise the flame and mix again. Allow it to heat up to 90 degrees.

Step 2. Cool

Take a slightly larger pot than the one you have with the milk and fill it with cold water and/or ice to make an inverted bain-marie (to cool down). Pour this mixture into a separate container and cover it. You will need to maintain the same temperature as it is now, so wrap the container in a blanket or blanket and reserve it for 24 hours in a place such as inside the microwave oven (without turning it on) or in a cool place that does not get too cold .
