Chaufa rice: very typical and spectacular Peruvian recipe

Ingredients

  • 120 grams of raw chicken breast cut into cubes
  • A large portion of rice already cooked (it does not matter if you have it from the day inside)
  • 2 eggs
  • soy sauce to taste
  • a pinch of sugar
  • 1/4 cup finely chopped chives
  • A teaspoon of finely chopped ginger
  • Salt and pepper to taste
  • 4 tablespoons vegetable oil

Preparation

Step 1. Seal

Heat a wok or large skillet over high heat for 3 minutes or until it begins to smoke. Add two tablespoons of vegetable oil and immediately, seal the chicken cubes that must previously be seasoned. Let them cook for about 30 seconds, turning them constantly on all sides. Allow them to seal about 3 more minutes until you see them golden brown. Finally, save them.

Step 2. Saute

Put the wok or pan back on the heat and repeat the procedure from the previous step regarding the heating time and the amount of oil. Add the teaspoon of ginger and fry for 10 seconds. Now add the two eggs and start beating them to form an omelette but broken. Apply a little salt and pour over the rice. If your culinary skills allow it, skip the wok so that the ingredients are mixed, if not, do it with the help of a wooden spoon, making sure that the rice is toasted.

Step 3. Mix and serve

It will be time to reincorporate the chicken into the mixture, pour the soy sauce and if necessary, level with salt. Now add the sugar and chives, taking care to stir the rice all the time or sauté it. Serve this delicious chaufa rice right away and savor it in every spoonful. Bon Appetite.
