Carbonara pasta: simple recipe and to enjoy

Ingredients

  • 200 grams of spaghetti
  • 160 grams of bacon
  • 160 grams of Parmesan cheese
  • 2 egg yolks
  • 1 tablespoon of oil
  • parsley (optional)

Preparation

Step 1. Boil

Put a deep pot on medium high heat and add salted water. Let it boil and introduce the pasta so that it begins to cook for about 8 or 9 minutes. Remember that as the pasta softens, you can add the parts that were probably left out of the water.

Step 2. Chop and fry

Take the bacon and chop it into even sized squares or rectangles, not too big. Put a frying pan over medium heat and heat the tablespoon of oil in it; Once the oil is hot, put the bacon there to fry it a little.

Step 3. Mix

While the pasta is cooking and the bacon is browning a bit, add the 2 egg yolks and the Parmesan cheese separately in a small bowl and mix until well combined.

Step 4. Stir

Once your pasta is cooked, reserve a large tablespoon of the water it was cooked in and discard the rest. Add this tablespoon of pasta water to the pan in which the bacon was fried and put the spaghetti in one go, stirring so that everything is integrated. Finally add the eggs that you mixed with the Parmesan cheese and mix all these ingredients again in the pan.

Step 5. Serve
